Lockdown supper requires using up some left-overs – a roast cauliflower and zucchini, mint, yoghurt, Vietnamese, lime, almond salad; with a corn, tomato, avocado and mango salsa, accompanied by some prawns and extra avocado and mango, along with some gluten free cheese puff things from Aldi.

Plenty left over for lunch tomorrow.

Modestly I observe that my lock-down house guest / essential worker was very satisfied.

Thinking of all those folk who live on takeaways and have to cook meals for the next five nights.
