Experimented tonight with a larp (or larb) chicken salad, inspired by a favorite from a local restaurant. Fine tuning the dressing/sauce in the sweet, sour, and salty range is the trick. The rest worked well.

Substituting jalapeños and avocado for capsicum and spring onions was my option to accompany chicken, pineapple, and mushroom on this thin base pizza. I know the opinions about pineapple on pizza, but I think it pairs well with jalapeño. Maybe I’d go feta cheese instead of the avocado, but I liked the non-dairy creamy texture. …
