A recent side project has been perfecting nachos.
Given the relatively recent creation of the dish it’s not really a matter of authenticity as much as trying to ensure a satisfying distribution of ingredients, balance of flavours and textures, and, of course, crunch.

Mental Floss posted a video and accompanying article providing the history of nachos, and explores its most basic ingredients.
While it may appear quintessentially Mexican, the best known elements of the dish represent a fusion of tradition tradition adapting to newer cultures.
