The simpler of two offerings: pink non-sticky icing, smooth creamy vanilla custard that squeezes out in a pleasant fashion from the thin crisp pastry layers. Nicely balanced.
The Foundry in Maryborough. Very sticky icing, luscious vanilla custard, firm non-crisp layery pastry. The cream just cut through the sweetness of the icing to pleasant effect.
It’s Kathryn’s idea. It’s all my own fault. This one is from a Patisserie on the Hervey Bay waterfront. The pastry was flaky, but wanted to separate between layers, the custard was ok, and the icing pleasant.
