So, I’ve been experimenting with dairy free chocolate fudge.
Someone in my family is pining for fudge that’s dairy free. (and soy and gluten free as well)
It seems a lot of fudge recipes contain blocks of chocolate, but that’s difficult for dairy-free and makes for an added level of cost.
The current recipe I’m using contains: a can of sweetened condensed coconut milk, one cup of brown sugar, one cup of white sugar, half a teaspoon of salt, one cup of cocoa powder, and three tablespoons of coconut oil.
This is simmered for ten minutes or so, stirring constantly, then two tablespoons of vanilla paste added and poured into a tray.
The taste is fine, and the texture is close to how I like it.
I think it still needs a bit more fat for creamier consistency.
My preference is for a smooth and silky firm texture, not sticky or chewy.
I’m going to experiment with coconut butter in addition to the coconut oil.
