Going to Sydney means two trips.
One on Rex to Melbourne, then Virgin to Sydney.
Why Melbourne? It’s the same distance and same price as Adelaide and the flights between Mel-Syd are shorter, cheaper and far more frequent.
Once in Melbourne plan for an hour between flights.

Until you wake up, hear the radio mention fog, and realise your plans for the day will change.
Status update: 9.30am departure from Mount Gambier delayed by about two hours. (Maybe more depending on whether there are any delays turning the plane around in Melbourne.)
I’ll be advised about a new flight from Melbourne to Sydney sometime this hour. I’m thankful Rex are helpful with this as I don’t purchase flexible fares.
Which is why travel to cities by air for meetings involves going the day before. (This time I’m travelling another day earlier for personal R&R)
